Title: Feta Mashed Potatoes - Ew 5/96

Yield: 8 Servings

2lbBaking potatoes; peeled and cubed
1/4cSkim milk
3tbFeta cheese; crumbled
2tbNonfat sour cream
1/2tsSalt
1/2tsDried oregano
1/4tsPepper

: Place potatoes in a medium saucepan; cover with water, and bring to a boil. Cover potatoes, reduce heat, and simmer 20 minutes or until potatoes are very tender.

: Drain potatoes well; and return to pan; beat at high speed of a mixer until smooth. Add skim milk, feta cheese, sour cream, salt, oregano, and pepper, and beat well.

Per serving: 111 calories (6% from fat), 3g protein, 0.7g fat (sat 0.4g, mono 0.1g, poly 0.1g), 23.6g carbohydrates, 1.7g fiber, 3mg cholesterol, 0.4mg iron, 187mg sodium, 30mg calcium.
